CAPRESE SALAD - ESPECIALLY GOOD WITH FRESH BASIL.
Ingredients:
•3 Vine-Ripe Tomatoes
•1 pound Fresh Mozzarella
•1 bunch Fresh Basil
•Virgin Olive Oil
•Salt And Pepper
Instructions:
Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste.

BASIL PESTO - AMAZING!
Ingredients:
2 cups
Fresh Basil Leaves  (packed, can sub half the basil leaves with baby spinach)
½ cup
Parmesan-Reggiano Cheese  (or freshly grated Romano, about 2 ounces)
½ cup

Pine Nuts  (can sub chopped walnuts)

Garlic Cloves  (minced, about 3 teaspoons)
¼ teaspoon
Salt  (more to taste)
0.12 teaspoon
Black Pepper  (freshly ground, more to taste)
